Fast, Quick and Easy recipes. Great to keep in the fridge to munch on and low fat.
Add some bread and a grilled meat and you got supper.
I got these form my Jul/Aug issue of Simple and Delicious and it's is only the tip of the iceberg in the recipes they include.

Babe, thanks for transfering the recipes over here. I didn't even think about us already having a recipe topic!
Seeing Bee's Grilled dill veggies reminded me of the dill potato salad I like to make.
5 lb cubed potatoes, boiled, rinsed and cool. 2 stalks celery, chopped 2 hard boiled eggs, chopped 1 medium red onion, chopped 2 tablespoons dill pickle relish 1 tablespoon prepared brown mustard 1 tablespoon dill weed 3/4 cup mayonnaise
Mix all ingredients well. Refrigerate. It's always better if you make it a day ahead of time. You can adjust the mayo on how creamy you want the potato salad to be. This always goes good with grilled hamburgers.

Makeover Fruit Pizza Ingredients:
* 1 cup all-purpose flour * 1/4 cup confectioners' sugar * 1/2 cup cold butter * 1 package (8 ounces) reduced-fat cream cheese * 1/3 cup sugar * 1 teaspoon vanilla extract * 2 cups halved fresh strawberries * 1 can (11 ounces) mandarin oranges, drained * 1 cup fresh blueberries * GLAZE: * 5 teaspoons cornstarch * 1-1/4 cups unsweetened pineapple juice * 1 teaspoon lemon juice
Directions: In a large bowl, combine flour and confectioners' sugar. Cut in butter until crumbly. Press onto an ungreased 12-in. pizza pan. Bake at 350° for 10-12 minutes or until very lightly browned. Cool on a wire rack. In a small mixing bowl, beat cream cheese, sugar and vanilla until smooth. Spread over crust. Arrange the strawberries, oranges and blueberries on top. For glaze, in a small saucepan, combine the cornstarch, pineapple juice and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly. Drizzle over fruit. Refrigerate until chilled. Yield: 16 servings.

Strawberry Shortbread Pie
Ingredients:
* 3/4 cup sugar * 3 tablespoons cornstarch * 1-1/2 cups water * 1 package (3 ounces) strawberry gelatin * 4 cups sliced fresh strawberries * 1 shortbread crust (9 inches)
Directions: In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in gelatin powder until dissolved. Transfer to a small bowl. Chill until partially set. Place strawberries in the crust; pour gelatin mixture over berries. Cover and refrigerate until set.
