Nacho Beef Dip
1 pound 95% lean ground beef 1 (15 to 15 1/2-ounce) jar prepared cheese dip 1/2 cup prepared mild OR medium chunky salsa 1/2 small red bell pepper 2 green onions, (optional) 1/4 cup sliced ripe olives, (optional) Blue, yellow and/or white corn tortilla chips Brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes, or until beef is no longer pink, breaking up into small crumbles. Remove beef from skillet with slotted spoon and place in 9-inch microwave-safe round baking dish. Add cheese dip and salsa. Microwaave, uncovered, on HIGH for 2 minutes Using pot holders, stir beef mixture carefully. Continue to microwave, uncovered, on HIGH 1 to 4 minutes longer until heated through. Meanwhile, cut bell pepper into 1/4-inch pieces. Cut green onions crosswise into thin slices. Using pot holders, remove pie plate from microwave. Stir beef mixture carefully. Let stand 1 minute. Sprinkle top of beef mixture with bell pepper, green onions and olives. Serve with tortilla chips for dipping.

Salsa Bean Dip
1 (16-ounce) jar ORTEGA® Refried Beans 1/2 cup ORTEGA Salsa - Thick & Chunky (Medium) 1/2 cup shredded mild cheddar cheese HEAT beans, salsa and cheese in medium saucepan over medium-high heat for 3 to 4 minutes or until bubbly and cheese is melted. SERVE with tortilla chips. Makes 6 servings.
Variations: Add 1/4 cup ORTEGA® Diced Green Chiles OR 2 teaspoons ORTEGA® Diced Jalapeños.

Just finished the Peanut Butter Snacks and then are easy, easy, easy and taste great. Lilred like's them and she doesn't like p-nut butter.
Made some bar cookies also and they are great.

Diggind out the "traditional" recipes I make every year and my son and step-son have put in his usual request.
I think that cooking is what I enjoy most about the holiday's. Expecially desserts.

I think I won't really be looking at the scale for the next week or two... although the big thing I like about this time of year is making the goodies and giving homemade goodies to some friends and family!

I try to find nice plates at the dollar store or where ever and put a variety of goodies on it, wrap it up in colored Saran Wrap and give them out.
I also get the large coffee cups and pack them full of flavored cocoa packs, peppermint and some treats, cover them in the colored wrap and give them out.
I love to cook .

Ok, this one will definitely not do for those on a diet, but it is SOOO good! It only takes a few minutes and is better if if is allowed to set for a while before serving. A very simple 5-cup fruit salad- 1 cup mandarin orange slices, drained 1 cup pecans 1 cup miniature marshmallows(try the multi-color fruit flavored ones!) 1 cup toasted flaked coconut 1 cup sour cream Mix all together. Refrigerate. You can substitute the coconut for another fruit like mango or pineapple, or you can add to it. Simple and quick. I like to add maraschino cherries - makes it pretty as well as Yum!

Taylor, We have made that salad in my family for more years than I want to admit but we also add grapes that have been halved and seeded (unless already seedless) nd use wlnuts. I know it adds up to 6 cups of stuff, but we always called it "5 cup salad" and have it for all the big holiday meals.

My dad used to like all the fruit salads. His favorite was drained fruit cocktail, maraschino cherries, coconut, pecans, fresh orange pieces, fresh sliced bananas, fresh apple pieces all mixed together with cool whip! He also liked the kind made with the green pistachio pudding, crushed pineapple and mini-marshmallows. Here's one my granddaddy used to make - 12 egg whites, sugar to taste, 3 large sweet apples. Peel apples, 1 at a time. With a tablespoon, scrape the apples to get the juice and pulp, almost like really fine applesauce. Add a teaspoon of lemon juice to keep it from turning brown. Set in fridge. Beat egg whites with sugar until stiff. Begin adding the apple and continue beating. Don't add to quickly or it will just be soupy. This makes what he called "Apple Snow" and goes as a topping for fresh warm gingerbread or spice cake squares.
